Easy Recipe: No-Nut Larabars

This recipe is a delicious sweet treat made with only a few wholesome ingredients.
  • 7 medjool dates
  • ¼ cup raw sunflower seeds
  • ¼ cup raw pumpkin seeds
  • ¾ cup shredded coconut
  • 2 tablespoons water
  • 1½ tablespoons coconut oil melted
  1. Blend the sunflower seeds, pumpkin seeds and coconut in a Vitamix (or food processor) until fine
  2. Add in dates, oil and water and pulse until it is doughy
  3. Line a pan with parchment paper
  4. Press down on the dough so that it is packed well.
  5. Place in refrigerator to set - at least two hours.
  6. Slice and eat.
Allergy Alert: While the FDA regards coconut as a tree nut, technically it is not a botanical nut. Most people allergic to nuts can eat coconut safely. However, please check with your physician if you have nut allergies.
