Easy Recipe: 3C Healthy Chocolate Smoothie

I love smoothies. There are so many deliciously nutritious recipes that can fool a kid or even an adult into eating more veggies. Any mom, dad, kid or busy individual can make a smoothie filled with fruits and vegetables. It’s simple and not very time consuming. The fiber from the produce often satisfies cravings and fills you up. It just takes a little trial and error to find the right ingredients . 

My latest smoothie sensation is the 3C healthy smoothie…creamy and made with cacao and cauliflower.  Yes, you heard me…cauliflower. I love adding cauliflower to smoothies because its taste is overpowered by stronger flavors like cacao or other spices. Though you can’t taste the cauliflower, it still provides plenty of nutritional support including anti-inflammatory and antioxidant properties that have been known to decrease cancer risk.

Not only do I love this 3C healthy chocolate smoothie as a power-packed drink, but I also often freeze it for a few minutes and substitute for ice cream. The combination of oat milk and medjool dates provides sweetness, while the cacao nibs texture and smokey cocoa taste are reminiscent of chocolate chips. My latest secret ingredient is to use doTERRA peppermint essential oil. It tastes like a Peppermint Patty without all the sugar and chemical laden ingredients.

A creamy, cacao and cauliflower smoothie that tastes as sweet as an ice cream shake with no added sugar and packed with nutrients.

Ingredients
  • 5 cups oat milk
  • 8 medjool dates
  • 2 cups frozen cauliflower
  • 3 tbsp. (vegan, organic chocolate protein powder) - optional
  • 5 tbsp. raw cacao nibs
  • 1 drop of doTERRA peppermint oil
Instructions
  1. Add cauliflower, medjool dates and protein powder to the high speed blender
  2. Blend until desired consistency (typically 30-45 seconds)
  3. Add 1 drop of doTERRA peppermint oil
  4. Blend for 10 seconds
  5. Add cacao nibs
  6. Blend for 3-5 seconds (just long enough to mix through but not puree the cacao nibs)
  7. Enjoy!
Notes
It's easiest to make smoothies in a high speed blender. If you have a traditional blender, blend with less ingredients and let frozen veggies defrost first.

  1. I would have never thought to use cauliflower in a smoothie. The dates would definitely sweeten it right up. I LOVE dates! Whenever I get bit by the sweet tooth, I reach for a couple dates.

    • Have you ever eaten “Buckeyes?” I make a healthy-version one – I fill a medjool date with nut butter/sun butter and it tastes like one. Regarding cauliflower, I ALWAYS use it. You barely taste it and get all the cruciferous veggie nutritional properties.

    • Yay. I’m glad you love smoothies, too. I mean, who doesn’t, right? They are so perfect for many reasons. Let me know if/when you use frozen cauliflower. It’s so easy and adds so much.

    • Ok, I have it. Whenever we meet, we are going to do a YouTube video on all the things we can eat/create with cauliflower. Some normal – cauliflower aka baked potato puree, cauliflower spicy chick-pea roasted salad and cauliflower smoothie…all while we are dressed up in cauliflower costumes.

    • Ahhhhhh….It’s a lot of trial and error. When I first started eating clean, I put in tons of veggies and very few sweeteners other than the oat milk. It really wasn’t good…but I kept at it. I read Jessica Seinfeld’s “Deceptively Delicious” years ago and she used cauliflower in her Mac-N-Cheese recipe. I made it, liked it and realized that cauliflower really has a dull taste. So, I now add it to all my smoothies to get the nutrients and fiber.

    • It’s awesome. I really love it. If you use protein powder that has stevia in it, you may not need the medjool dates or more sweet oat milk. I sometimes use almond milk instead because it’s lower in sugar content. It’s my new favorite. I use it in a smoothie bowl like ice cream aka nice cream or just as my morning breakfast. Hope you are well. Are you drinking that awesome coconut milk one from a few months ago from your juice cleanse?

    • Who would have ever thought that cauliflower would be my best friend. I love to steam it and add fun spices (savory not sweet.) I love to steam and puree, add vegan butter or EVOO and garlic for cauliflower mashed potatoes. And like you, I also love cauliflower rice.
